Chicken Waldorf Salad

- 1 cup crisp apples like Honeycrisp or Fuji, cored and chopped
- 1 cup cooked shredded chicken breast
- 1/2 cup celery chopped
- 1/2 cup seedless red or green grapes halved
- 1/4 cup walnuts toasted and roughly chopped
- 1/4 cup mayonnaise
- 2 tablespoons plain Greek yogurt for tang and lightness
- 1/2 tablespoon fresh lemon juice
- 1/2 teaspoon honey
- ¼ teaspoon EACH salt and black pepper
Place apples, chicken, celery, grapes, and walnuts in a large bowl.
In a jar, mix the mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper. Shake until smooth. Taste and adjust seasoning if needed.
Pour the dressing over the salad. With a spoon or spatula, gently fold everything together until all ingredients are evenly coated.
Serve immediately. If you aren’t serving right away, reserve the dressing until just before serving.
