Everything Smoked Salmon Deviled Eggs

6 eggs older eggs are better than fresher eggs 2 tablespoons mayonnaise 1 teaspoon Dijon mustard salt and pepper to taste 2 ounces smoked salmon 2 tablespoons Everything Bagel seasoning
Add eggs to a large pot and cover with water to 2” above the eggs. Bring to a boil
Once boiling, cover the pot and turn off heat. Allow it to sit for 12 minutes.
Drain and place the eggs in cold water. Peel as soon as they are cooled.
Slice eggs in half horizontally and remove yolks.
Roll the egg whites in Everything Bagel seasoning and set them on a plate.
In a food processor or mini chopper, combine the yolks with mayonnaise and mustard. Blend until smooth. Season to taste with salt and pepper.
Add yolk mixture to a piping bag with a star tip. Fill each egg with yolk mixture.
Garnish the eggs with a strip of rolled smoked salmon and additional Everything Bagel seasoning.
Use older eggs for easier peeling after boiling.
Be sure to thoroughly chill the eggs in cold water before peeling to make the process easier.
Adjust the amount of mayonnaise and mustard to achieve the desired consistency and flavor of the yolk mixture.
Experiment with different types of smoked salmon for varying levels of smokiness and richness.
