Ingredients
  

  • 1/2 cup Greek yogurt
  • 1/2 cup cucumber peeled and grated
  • 1 clove garlic minced
  • 2 teaspoons fresh dill chopped or 1/2 teaspoon dried
  • 1/2 tablespoon fresh lemon juice
  • 1/2 tablespoon olive oil
  • 2 Roma tomatoes chopped
  • 1/2 English cucumber chopped
  • 1/2 green bell pepper chopped
  • 1/2 small red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 2 ounces feta cheese crumbled or cubed
  • 1 tablespoon olive oil
  • 1/2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Sqeeze excess water out of the cucumber. Mix it in a bowl with the Greek yogurt, garlic, dill, lemon juice, and olive oil. Season to taste. Spread it on a serving platter.
  • In a large bowl, combine the tomatoes, cucumber, bell pepper, red onion, olives, feta, olive oil, vinegar, and oregano. Season with salt and pepper. Stir to combine.
  • Pour the salad over the tzatziki.
  • Serve with toasted pita chips.
