2 cans corn or 4 ears of corn on the cob 1/2 cup mayonnaise Juice from 1 lime plus zest of that lime 4 green onions chopped 2 jalapenos diced 1/2 teaspoon chili powder mild to hot 1/4 teaspoon salt 1/2 cup Cotija cheese 1/2 cup cilantro chopped 1 lime cut into wedges Tajin
Combine the corn, mayonnaise, lime juice, lime zest, green onions, jalapeno, chili powder, and salt in a bowl.
Refrigerate until chilled.
Garnish with Cotija cheese, cilantro, lime wedges, and Tajin. Serve cold.
