If you need something cold and colorful for a summer party, these red, white and blue popsicles are an easy win. Each popsicle is layered with bright fruit flavors so you get all three colors in one frozen treat.
In a blender, puree the strawberries with honey and lemon juice until smooth. Taste and adjust sweetness if needed.
Spoon the strawberry mixture evenly into the bottoms of popsicle molds, filling each about one-third full. Freeze for 1 to 2 hours, or until mostly firm.
Stir together the coconut milk, honey, and vanilla extract. Spoon the yogurt over the frozen strawberry layer, filling another third of the molds. Freeze again until mostly firm, about 1 to 2 hours.
Rinse the blender, then puree the blueberries with honey and lemon juice until smooth.
Spoon the blueberry mixture over the yogurt layer, filling molds to the top. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
To serve, run the molds under warm water for a few seconds and gently pull the popsicles out.
