1/4cupparsley or cilantrochopped (save some for the butter sauce)
6fajita-size flour tortillas
1/4cupbuttermelted
For the sauce
1/2cupGreek yogurt
1/2tablespoonlemon juice
1/2teaspoonchipotle powder
Instructions
In a large bowl, add ground beef, bell pepper, onion, 2 cloves of the garlic, paprika, cumin, pepper, and salt and parsley. Mix until fully combined.
Slice the rounded ends off each tortilla to make a square. Spread a thin, even layer of the beef mixture onto the tops of the tortillas and stack them up.
Slice the stack into 4 even strips. Turn the stack. Run 4 skewers through the stack evenly, lengthwise.
Cut between the skewers to make 4 rows of kabobs.
Mix together the melted butter, 1 clove of minced garlic, and a little chopped parsley.
Grill the kabobs on all sides over medium-high heat until the beef is fully cooked and the tortillas are crispy and golden. Baste them with the garlic butter as they cook.
For the sauce, mix the Greek yogurt or mayonnaise, lemon juice and chipotle powder until smooth.
