These buffalo chicken stuffed peppers are packed with creamy buffalo chicken filling and topped with melty cheese and a drizzle of blue cheese dressing.
12jalapeno pepperscut in half lengthwise and seeded
1cupshredded chicken breast
4ouncescream cheesesoftened
1/2cupshredded cheddar cheesedivided
4tablespoonsFrank's Buffalo Wing Saucedivided
1/4teaspoonsalt
1/4cupblue cheese dressingoptional
Instructions
Preheat the oven to 400° F (200° C).
In a bowl, combine the shredded chicken, cream cheese, half the cheddar cheese, half the buffalo wing sauce, and the salt. Stir to combine.
Stuffed the peppers evenly with the filling. Top with the remaining cheddar cheese. Bake for 15 minutes, until the cheese has melted and is bubbly on top.
Drizzle on the remaining buffalo sauce and blue cheese dressing (or serve the blue cheese dressing as a dip on the side).

Notes
Look for peppers that are firm with no visible scrapes or gashes and all about the same size.
If you want to lower the spice level remove all of the seeds and membrane from the inside of the jalapenos. If you want them with more spice leave some in.
Avoid overcooking the peppers; they should be soft enough to eat easily but still hold their shape.
