Mini Meatball Subs are the perfect bite-sized appetizer packed with juicy meatballs, rich marinara sauce, and melty cheese, all nestled in soft, toasty buns.
Hollow out the inside of each roll, making the holes big enough for the meatballs but not piercing through the bottom.
In a sauce pan over medium low heat, melt the butter, garlic, parsley, and oregano, until the butter just starts to brown.
Brush the butter sauce all over the insides and tops of the rolls.
Add about 2 tablespoons of sauce to each hole. Put a meatball in the hole. Then top with the remaining sauce and the shredded mozzarella.
Bake for 12-15 minutes, until the cheese is melted and bubbly. Remove from oven.
Using a sharp knife, slice between each roll. Plate and garnish with parsley.
Cut them apart, carefully, and put them back in the oven for 5 more minutes to crisp up the sides of the bread.
Notes
You want to cut a big enough hole in the roll to accommodate the meatball but don't cut all the way through. The bottom could fall out along with your meatball.
Save time by using pre-made meatballs or make your own for extra flavor.
These meatball subs are best with perfectly crispy bread. Place them back in the oven after you cut them apart to crisp up on all edges.
