Ingredients
  

For the base:

  • 16 ounces plain hummus store bought or homemade
  • 1 tablespoon olive oil

For the toppings:

  • 1/2 cup diced cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup sliced Kalamata olives
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons finely diced red onion
  • 1 tablespoon chopped fresh parsley
  • Freshly ground black pepper to taste

For serving

  • Pita bread, pita chips, crackers, or fresh vegetables

Instructions
 

  • Spread the hummus evenly onto a serving plate or shallow bowl, creating a slight well in the center with the back of a spoon.
  • Drizzle olive oil over the hummus.
  • In a small bowl, gently combine the cucumber, tomatoes, olives, red onion, and parsley.
  • Spoon the mixture evenly over the hummus, then sprinkle with crumbled feta and black pepper.
  • Serve immediately with pita or your favorite dippers.
