Loaded Smashed Potato Bites are roasted until the edges turn crispy and golden. Then they’re topped with melty cheese, crispy bacon, and fresh chives for a bite-sized version of loaded potatoes.
Preheat the oven to 425° F (220° C). Line a baking sheet with parchment paper.
Bring a pot of water to a boil and add the potatoes. Boil until tender, about 12-15 minutes.
Drain the potatoes and let them sit in the colander for 10 minutes.
Place them on the baking sheet and use a potato masher or bowl to smash each potato.
Drizzle well with cooking oil and salt and black pepper.
Roast in the oven until the potatoes are crispy and golden around the edges, about 25 minutes. Flip halfway so they cook evenly.
Remove from oven. Season with salt. Top with shredded cheese and crumbled bacon. Put them back in the oven for 3-5 minutes, until the cheese is melted. Garnish with fresh chives.
Notes
Cooking time will depend on how big the potatoes are. Cook until crispy.
