Loaded Smashed Potato Bites
Loaded Smashed Potato Bites are the kind of appetizer people gather around as soon as they hit the table. Baby potatoes are boiled until tender, smashed, and roasted until the edges turn crispy and golden. Then they’re topped with melty cheese, crispy bacon, and fresh chives for a bite-sized version of loaded potatoes.

They have the perfect mix of textures. The outside gets crispy while the inside stays fluffy, and the cheesy bacon topping adds that classic loaded potato flavor in every bite. They’re easy to make and great for game days, parties, or anytime you want a savory snack to share.
Helpful Tips
- Let the potatoes steam dry. After draining, let them sit in the colander for about 10 minutes so excess moisture evaporates. This helps them crisp up better in the oven.
- Use plenty of oil. Drizzling the smashed potatoes well with oil helps the edges roast and turn golden.
- Flip halfway through roasting. Turning them once ensures both sides get crispy and evenly browned.
