These Pot of Gold Brownies are fudgy homemade brownies get topped with green cream cheese frosting, candy rainbows, and a sprinkle of edible gold to create a dessert that’s as cute as it is tasty.
Preheat the oven to 350°F(175°C). Grease a 9x9 baking pan and set aside.
In a medium bowl stir together softened butter, sugar, and vanilla extract. Add the eggs and mix well. In a small bowl stir together flour, cocoa, baking powder and salt.
Pour the dry ingredients into the bowl and mix until smooth.
Pour into the prepared baking pan and bake for 20-25 minutes, until a toothpick comes out clean. Let cool completely on a wire rack.
Cut them into equal squares.
For the frosting:
Beat butter on medium high speed for about 5 minutes, until light and fluffy. Add cream cheese and beat until smooth.
Slowly add powdered sugar, until it is all added and the frosting is smooth and creamy. Reserve about 1/4 of the frosting in a separate bowl.
Drop in a few drops of green food coloring and fold it in until you reach the desired color.
Frost the brownies with the green frosting. Put the white frosting into a piping bag to pipe on little clouds on either side of the brownies.
Cut a rainbow rope into 3” pieces. Place a piece between the clouds. Sprinkle on a few gold coin sprinkles.
