Ingredients
For the brownies:
- 1/2 cup butter softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup flour
- 1/3 cup cocoa powder
- 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- Rainbow sour rope
- Gold coin sprinkles
For the frosting:
- 4 ounces cream cheese softened
- 1/4 cup unsalted butter softened
- 2 cups powdered sugar
- Green gel food coloring
Instructions
For the brownies:
- Preheat the oven to 350°F(175°C). Grease a 9×9 baking pan and set aside.
- In a medium bowl stir together softened butter, sugar, and vanilla extract. Add the eggs and mix well. In a small bowl stir together flour, cocoa, baking powder and salt.
- Pour the dry ingredients into the bowl and mix until smooth.
- Pour into the prepared baking pan and bake for 20-25 minutes, until a toothpick comes out clean. Let cool completely on a wire rack.
- Cut them into equal squares.
For the frosting:
- Beat butter on medium high speed for about 5 minutes, until light and fluffy. Add cream cheese and beat until smooth.
- Slowly add powdered sugar, until it is all added and the frosting is smooth and creamy. Reserve about 1/4 of the frosting in a separate bowl.
- Drop in a few drops of green food coloring and fold it in until you reach the desired color.
- Frost the brownies with the green frosting. Put the white frosting into a piping bag to pipe on little clouds on either side of the brownies.
- Cut a rainbow rope into 3” pieces. Place a piece between the clouds. Sprinkle on a few gold coin sprinkles.
