1 1/4cupchocolate chipsmilk choc or semi sweet, divided
2cupsmini marshmallows
2graham crackers1 broken into pieces, 1 crushed
Instructions
Preheat the oven to 375° F(190°C) and grease a pizza round. Set aside.
In a small bowl mix the flour, baking soda, and salt until mixed. Set aside.
In a large bowl, cream the butter, brown sugar, sugar, and vanilla until creamy. Add the eggs one at a time, mixing to combine. Stir in the dry ingredients.
Press the cookie dough onto the pizza round almost to the edge. The cookie dough will spread out as it cooks. Cover and refrigerate to firm up for an hour before baking. Bake for 20 minutes until golden brown.
Remove from the oven and sprinkle with 1 cup of chocolate chips. Put it back in the oven for 2 minutes to melt the chips. Spread the melted chocolate out to cover the cookie leaving an inch bare crust all the way around.
Sprinkle with mini marshmallows and broil to toast the marshmallows. Keep an eye on it so they don’t burn.
Remove from the oven and sprinkle with remaining chocolate chips, graham cracker pieces and crumbs. Serve warm.
Notes
You can use a culinary torch to toast the marshmallows also.
This recipe was made using a 9 inch pizza round.
If you want a thinner cookie base only use half of the cookie dough.
