Italian cornbread skillet

Salty salami, sweet cherry tomatoes, and melty mozzarella turn a simple box mix into something that feels like a whole appetizer spread baked into one pan. It comes together with minimal prep and bakes in under 30 minutes, so it is an easy addition to a busy weeknight or a party table. Serving it straight from the cast iron skillet keeps it warm and makes for a rustic, eye-catching presentation.

Helpful Tips

  • Preheat your skillet if you can: Warming the cast iron in the oven for a few minutes before adding the batter helps create a crispier, more golden bottom crust.
  • Pat the tomatoes dry: Cherry tomatoes release moisture as they bake, so blotting them beforehand helps keep the batter from becoming too wet in the center.
  • Warm the marinara before serving: A quick warm up on the stove or in the microwave makes the dipping sauce taste fresher and pairs better with the warm cornbread.
