Jack o Lantern Quesadillas

What makes these so great is how simple they are to customize. Use cheddar for a classic orange pumpkin look or mix in mozzarella or pepper jack for extra flavor. You can even sneak in some finely chopped veggies or shredded chicken for a more filling snack.

Helpful Tips

  • Use a paring knife or small cookie cutter to carefully cut out the face shapes on the top tortilla.
  • Lightly spray or brush the outside with oil to get that golden, crispy finish in the oven or on a skillet.
  • If you’re making a big batch, keep them warm in a low oven until ready to serve.
