Choriqueso (Mexican Cheese Dip)
Choriqueso is bold, melty, and built for scooping. Savory Mexican chorizo is browned until slightly crisp, then folded into gooey melted cheese for a dip that is rich and full of flavor. It is simple to make but tastes like something you ordered at your favorite local spot.

This is one of those appetizers that works for almost any occasion. Game days, taco nights, backyard hangouts, or holiday parties all feel like the right time to serve it. You only need a handful of ingredients, and it comes together quickly on the stovetop or in a skillet.
Helpful Tips
- Brown the chorizo fully before adding cheese so you get crispy bits and deep flavor throughout the dip.
- Use a good melting cheese like Oaxaca, Monterey Jack, or a combination for the smoothest texture.
- Serve immediately or keep it warm in a small slow cooker so the cheese stays perfectly scoopable.
