Christmas Rice Krispies Treats

These are a quick win when you want something fun but don’t feel like baking. The buttery vanilla marshmallow base is rich and gooey, and the candy on top adds crunch and color. It’s also a great one to make with kids since the steps are simple and fast.

Helpful Tips

  • Use fresh marshmallows. Stale ones won’t melt as smoothly and can make the mixture dry.
  • Don’t press too hard. When spreading the mixture into the pan, use damp hands and press just enough to level it. Too much pressure makes them dense and smashes the M&M’s.
  • Work quickly. Once the cereal is mixed in, get it into the pan fast so it doesn’t set up in the pot.

Ingredients

  • 6 cups Rice Krispies cereal
  • 6 tablespoons salted butter cut into 6 pieces
  • 1/2 teaspoon vanilla extract
  • 10 ounces mini marshmallows 1 package, about 4 cups
  • 1 cup Christmas M&Ms divided
  • 1/2 cup holiday sprinkles divided
  • 4 ounces white chocolate wafers

Instructions

  • Line an 8×8” pan with parchment paper. Lightly spray with oil or nonstick cooking spray and set aside.
  • In a large saucepan over low heat, melt the butter, gently stirring, so the butter melts evenly. The butter will begin to foam and turn golden. Turn off the heat. Stir in the vanilla.
  • Return the pot to low heat. Add the marshmallows ans stir constantly until they’re all melted. You can turn off the heat about halfway through and the residual heat will melt the rest.
  • Add in the Rice Krispies and gently stir until combined.
  • Add in half of the M&Ms and holiday sprinkles. Stir just until incorporated or the M&Ms will start to melt. Pour the mixture into the 8×8 pan. Lightly wet your hands and gently pat the mixture down to even it out.
  • Put the white chocolate wafers in a microwave-safe bowl and microwave at 15-second intervals until melted.
  • Use a spoon to drizzle about half of the white chocolate over the treats, or add the melted chocolate to a zip top bag and snip the corner to drizzle the chocolate over the top of the treats.
  • Sprinkle on remaining M&Ms and sprinkles. Then continue to drizzle the chocolate over the top.
