These are proof that you do not need a long ingredient list to make something absolutely delicious. With just a handful of pantry staples and a box of corn muffin mix as your shortcut, you get golden, crispy bites in under 30 minutes. They are wonderfully versatile, working just as well as a quick snack, a party appetizer, or a fun side for your favorite barbecue plate.

Helpful Tips

  • Watch your oil temperature: Keep the oil at a steady 350°F using a thermometer, since oil that is too cool will make the fritters greasy and oil that is too hot will burn the outside before the inside cooks through.
  • Drain the corn well: Shaking off any excess liquid from the canned corn before mixing keeps your batter from becoming too wet, which helps the fritters hold their shape in the oil.
  • Fry in small batches: Adding too many fritters to the skillet at once drops the oil temperature and leads to uneven browning, so give them room to fry properly.
