Apple Fritter Bread
This Apple Fritter Bread takes everything irresistible about a bakery apple fritter and turns it into an easy quick bread you can make in one bowl. Imagine slicing into a loaf where every bite tastes like the inside of your favorite apple fritter, minus the trip to the donut shop.

It comes together with pantry staples and just ten minutes of hands-on prep, so there’s no fussing with yeast or frying oil. Once it’s glazed, it looks like something from a specialty bakery, but it’s genuinely simple enough for a weekday morning. Whether you’re serving it for brunch or wrapping up slices to share, this loaf never lasts long.
Helpful Tips
- Chop the apples into small, even pieces: Keeping the pieces small and uniform helps them cook through evenly and distribute more smoothly through the batter, so you get apple in every bite instead of large pockets.
- Don’t overmix the batter: Stir just until the flour disappears into the wet ingredients, since overworking the batter develops too much gluten and can leave you with a denser, tougher loaf instead of a tender one.
- Check for doneness with a toothpick in the center: Because the fruit layer adds extra moisture, insert your toothpick into the thickest part of the loaf rather than near the edges to make sure the middle is fully baked before pulling it from the oven.
