Chile Cheddar Cornbread
Chile Cheddar Cornbread is warm and studded with melty cheddar, with just enough green chile to make your kitchen smell like a Tex-Mex cantina. It comes together with just a handful of extra ingredients and one bowl, so cleanup is a breeze.

This cornbread takes the ease of a box mix and turns it into something you would swear was made from scratch. The green chiles add a gentle, savory warmth without any real heat, making it a hit even with picky eaters. It is the perfect side for a bowl of chili, a summer barbecue, or just an afternoon snack with butter and honey.
Helpful Tips
- Do not overmix the batter: Stir just until the ingredients come together, since overmixing activates the gluten in the mix and can leave you with a dense, tough cornbread instead of a tender one.
- Drain your green chiles well: Excess liquid from the can can make the batter too wet, so give the chiles a quick pat with a paper towel before folding them in.
- Check for doneness with a toothpick: Ovens vary, so start checking around the 20 minute mark and pull the pan the moment a toothpick inserted in the center comes out clean, since overbaking will dry it out.
