Crispy flatbread

The creamy brie, chewy cranberries, and crunchy walnuts give you a little bit of everything in every bite, and the hot honey ties it all together with just the right amount of heat. It’s an easy win for holiday gatherings, a cozy fall date night, or any evening when you want something special without much effort.

Helpful Tips

  • Cube the brie while it’s cold: Brie is much easier to cut straight from the fridge, and small, even cubes melt into soft pockets instead of one greasy puddle. You can leave the rind on, since it softens beautifully in the oven.
  • Toast the walnuts first: A few minutes in a dry skillet over medium heat brings out their nutty, buttery flavor and keeps them crunchy on top of the melted cheese. Pull them off the heat as soon as they smell fragrant so they don’t scorch.
  • Save some honey for the finish: Spreading most of the hot honey under the cheese seasons the whole flatbread, but the reserved drizzle at the end is what gives you that glossy, sweet-heat pop. Add the thyme leaves at the same time so they stay bright and fresh.
