French Onion Bites
If you love the rich, savory flavor of French onion soup, you’re going to want to try these French Onion Bites. They take everything you love about the classic soup, sweet caramelized onions, melty Gruyere cheese, and a hint of thyme and tuck it into a crispy phyllo shell for an easy, party-ready appetizer.

These are perfect for holiday gatherings, game days, or any time you want a bite-sized snack that feels a little fancy without the effort. You can even make the onion mixture ahead of time, so all you have to do is assemble and bake right before serving.
Helpful Tips
- Take your time caramelizing the onions. Low and slow is key to building flavor. Don’t rush it—it’s worth the wait.
- Use a sweet onion. It balances the richness of the cheese and pairs well with the thyme and sherry.
- Let’s talk about cheese. Gruyère is the classic French cheese used to make the soup, but if you can’t find it, you can use Swiss or Emmental cheese. Gouda will also work.
- Prep ahead. You can make the onion filling a day in advance and store it in the fridge until you’re ready to assemble and bake.
- Find the phyllo cups. If you can’t find the mini phyllo pastry shells at your local grocery store, you can purchase them on Amazon.
