Ingredients
- 1 cup brewed espresso or strong coffee cooled
- 2 tablespoons coffee liqueur optional
- 8 ounces mascarpone cheese softened
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 12 ladyfingers halved
- unsweetened cocoa powder, chocolate shavings for garnish
Instructions
- Combine the espresso and liqueur (if using).
- In a mixing bowl, whip the heavy cream to soft peaks.
- In a separate bowl, beat the mascarpone, sugar and vanilla until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.
- Fill 1/3 of the cup with the mixture.
- Dip two halves of ladyfingers in the coffee, then set them on top of the mixture in the cup.
- Repeat the layers once more. Refrigerate for at least 4 hours.
- Serve chilled, garnished with cocoa powder and chocolate shavings.
