These Greek Lamb Bites are the kind of appetizer that feels a little elevated without being complicated.
Ingredients
- 1/2 pound ground lamb
- 1/4 cup breadcrumbs
- 2 tablespoons onion grated
- 2 cloves garlic minced
- 1 tablespoon fresh parsley chopped
- 1 tablespoon fresh mint chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon EACH salt and pepper
- 12 mini pita or flatbread rounds
- additional fresh herbs for garnish
For the tzatziki
- 1/2 cup Greek yogurt
- 1/4 cucumber grated and squeezed dry
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon fresh dill chopped
- salt to taste
Instructions
- Preheat the oven to 400°F(200°C). Line a baking sheet with parchment paper.
- Combine the lamb, breadcrumbs, onion, garlic, parsley, mint, oregano, salt and pepper in a bowl. Mix well.
- Form the mixture into 12 lightly-packed meatballs.
- Spread the meatballs out on the baking sheet and bake for 18 minutes.
- Mix all of the tzatziki ingredients in a bowl and chill until ready to serve.
- Warm the pita rounds on a tray in the oven or in the microwave, until soft and warm.
- To serve, place a meatball on each pita. Spoon on some tzatziki, and garnish with herbs.
