Ingredients
- 3 tablespoons olive oil
- 2 tablespoons lemon juice freshly squeezed
- 1 tablespoon lemon zest
- 1 teaspoon paprika
- 1 clove garlic minced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 1/2 pounds chicken thighs boneless, skinless, cut into 1-inch chunks
- 1 cup Tzatziki sauce
Instructions
- In a medium bowl, combine the first 7 ingredients. Reserve 2 tablespoons of the mixture for later.
- Add the chicken cubes to the bowl and stir until coated. Marinate for at least 2 hours to overnight.
- When ready to cook, preheat the grill to 350° F(175°C). Thread chicken onto skewers. Place the skewers on the grill and cook for 5 minutes, then turn over. Baste both sides with the reserved marinade.
