Ingredients
  

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1 teaspoon paprika
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 pounds chicken thighs boneless, skinless, cut into 1-inch chunks
  • 1 cup Tzatziki sauce

Instructions
 

  • In a medium bowl, combine the first 7 ingredients. Reserve 2 tablespoons of the mixture for later.
  • Add the chicken cubes to the bowl and stir until coated. Marinate for at least 2 hours to overnight.
  • When ready to cook, preheat the grill to 350° F(175°C). Thread chicken onto skewers. Place the skewers on the grill and cook for 5 minutes, then turn over. Baste both sides with the reserved marinade.
  • Remove once chicken reaches internal temperature of 165° F(75°C), about 10 minutes.
  • Serve with tzatziki sauce.
