Grilled Cheese Roasted Tomato Focaccia Bread

There are few things as comforting as a grilled cheese sandwich, but when you swap out the bread for pillowy, olive-oil-rich focaccia and tuck in some sweet roasted tomatoes, the whole thing reaches another level.

It’s crispy on the outside, gooey in the middle, and layered with flavors that taste both rustic and a little indulgent. The focaccia gives you that chewy, airy bite, while roasted tomatoes add depth and brightness that balance the richness of the melted cheese.

Helpful Tips

  • I buy this roasted tomato foccacia at Trader Joe’s, but if you don’t have one near you, or they stop selling it, you can use any loaf of foccacia, or try making your own.
  • Use any type of cheese you like to fill the bread. I like to use a couple of different cheeses, and make sure they are good melting cheeses.

Ingredients
  

  • 1 Trader Joe’s Focaccia Bread with Roasted Tomato & Parmesan
  • 3 tablespoons butter softened
  • 1/4 cup mozzarella cheese shredded
  • ¼ cup cheddar cheese shredded
  • ¼ cup colby jack cheese shredded

Instructions
 

  • Cut the focaccia evenly through the middle with a large knife. Open it up and spread on the butter.
  • Heat a large skillet over medium high heat and toast both halves of the bread, butter side down. This will take about 3-5 minutes.
  • Once crispy, place the bottom half on a baking sheet. Top with the 3 cheeses, then put the top half on. Bake at 400 degrees F for about 12 minutes, until the cheese is melted inside. Cut into pieces and serve hot.
