  • Cut zucchini evenly – Slice zucchini into uniform pieces (about 1/8-inch thick) to ensure the zucchini doesn’t break when you thread it onto the skewer and for even cooking. The easiest way to do this is by using a mandolin or vegetable peeler.
  • Soak the skewers: If you are using wooden skewers make sure to soak them for at least 30 minutes in water before putting them on the grill. This will keep them from going up in flames.
  • Don’t overcook – Grill over medium-high heat for about 1–3 minutes per side until just tender and lightly charred. Overcooking can make the zucchini too soft and mushy.

Ingredients
  

  • 4 tablespoons butter
  • 1 garlic clove minced
  • 1 tablespoon all-purpose dry rub
  • 3/4 teaspoon lemon zest
  • 4 zucchinis medium sized

Instructions
 

  • Preheat the grill on medium-high to high heat.
  • Melt the butter in a saucepan over medium heat. Add the garlic, the dry rub, and lemon zest. Cook, stirring continuously for about 3 minutes. Remove from the heat and set aside to cool.
  • Wash and dry the zucchini. Use a mandolin to cut thin strips lengthwise about 1/8 inch thick.
  • Lay the slices out and brush with the butter mixture making sure to coat each piece.
  • Fold the zucchini into an accordion shape, like ribbon candy, and thread onto metal or wooden skewers.
  • Add the skewers to the grill and baste with remaining butter. Grill 1-2 minutes per side on all for sides until golden brown with singed edges.
