Mini Crunch Wraps
Mini crunch wraps are a playful take on the classic crunch wrap, typically made with a large tortilla filled with layers of tasty ingredients.
Ingredients
- 8 mini flour tortillas (I use street taco size)
- 4 ounces ground beef
- 1 tablespoon taco seasoning
- 2/3 cup cheddar cheese shredded
- 8 round tortilla chips
- 1/4 cup sour cream
- 1/2 cup lettuce chopped
- 1/2 cup diced tomatoes
- Cooking spray or oil for toasting
- Salsa and/or guacamole for dipping
Instructions
- In a skillet over medium heat, cook the ground beef, crumbling as it cooks. Drain any excess grease. Add the taco seasoning and equal amount of water. Stir until combined.
- Add a scoop of ground beef and a pinch of shredded cheese to the center of the 4 flour tortillas, leaving a generous border for folding. Place a tortilla chip on top. Spread sour cream over the tortilla chip, then top with lettuce and tomato. Tightly fold the edges of the tortilla toward the center, creating pleats.
- In a flat skillet over medium heat, heat the oil. Add the crunch wraps, seam side down and cook, turning halfway through, until tortilla is golden, about 3 minutes per side. Transfer to a plate or platter. Serve with salsa and guacamole.
