Pumpkin coffee cake

It comes together in one simple pan with everyday pantry staples, so it is just as easy to whip up for a lazy Saturday brunch as it is for a houseful of holiday guests. Pair a warm square with your morning coffee and you might never go back to plain muffins again.

Helpful Tips

  • Soften the butter properly: Let the butter sit at room temperature until it gives easily when pressed, since that helps it cream with the brown sugar into a light, fluffy base for the cake.
  • Keep the streusel chunky: Mix the topping with a fork only until coarse crumbs form, and leave some bigger clumps so you get those irresistible crunchy bites on top.
  • Let it cool before slicing: Give the cake the full 20 minutes in the pan to set up, which keeps the tender crumb from falling apart and the streusel from sliding off.
