Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup lager or light beer
  • 8 ounces cheddar cheese grated medium or sharp
  • 1/4 teaspoon cayenne pepper if desired

Instructions
 

  • Add butter and flour to a saucepan over medium heat. Whisk to combine as the butter melts. Add the garlic powder, mustard, salt and pepper. Cook for 1 minute.
  • Add beer, whisking continuously as you pour to form a smooth sauce. Cook for about 3 minutes, whisking occasionally, until slightly thickened. If it’s too thick, add a bit more beer.
  • Add the cheese a little bit at a time, stirring until melted.
  • Serve immediately with soft pretzels or other dippers.
