Ingredients
  

For the red layer:

  • 1 1/2 cups fresh strawberries hulled
  • 2 to 3 tablespoons honey or sugar
  • 1 tablespoon lemon juice

For the white layer:

  • 1 cup full-fat coconut milk
  • 1 to 2 tablespoons honey or maple syrup if needed
  • 1/2 teaspoon vanilla extract

For the blue layer:

  • 1 1/2 cups fresh blueberries
  • 2 to 3 tablespoons honey or sugar
  • 1 tablespoon lemon juice

Instructions
 

  • In a blender, puree the strawberries with honey and lemon juice until smooth. Taste and adjust sweetness if needed.
  • Spoon the strawberry mixture evenly into the bottoms of popsicle molds, filling each about one-third full. Freeze for 1 to 2 hours, or until mostly firm.
  • Stir together the coconut milk, honey, and vanilla extract. Spoon the yogurt over the frozen strawberry layer, filling another third of the molds. Freeze again until mostly firm, about 1 to 2 hours.
  • Rinse the blender, then puree the blueberries with honey and lemon juice until smooth.
  • Spoon the blueberry mixture over the yogurt layer, filling molds to the top. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  • To serve, run the molds under warm water for a few seconds and gently pull the popsicles out.
  • Store in the freezer until ready to serve.
