Ingredients
  

  • 1 pound baby potatoes
  • cooking oil
  • salt and black pepper to season
  • 2 slices bacon cooked and crumbled
  • 1/2 cup cheddar cheese shredded
  • fresh chives chopped

Instructions
 

  • Preheat the oven to 425° F (220° C). Line a baking sheet with parchment paper.
  • Bring a pot of water to a boil and add the potatoes. Boil until tender, about 12-15 minutes.
  • Drain the potatoes and let them sit in the colander for 10 minutes.
  • Place them on the baking sheet and use a potato masher or bowl to smash each potato.
  • Drizzle well with cooking oil and salt and black pepper.
  • Roast in the oven until the potatoes are crispy and golden around the edges, about 25 minutes. Flip halfway so they cook evenly.
  • Remove from oven. Season with salt. Top with shredded cheese and crumbled bacon. Put them back in the oven for 3-5 minutes, until the cheese is melted. Garnish with fresh chives.
