The hasselback cuts let the sweet chili, soy, and chili crunch glaze work its way deep into the sausage, so you get big flavor in every bite instead of just on the surface. A quick stint under the broiler gives them that irresistible charred edge, and the whole thing comes together in about fifteen minutes from start to finish. The spicy mayo dipping sauce is the perfect finishing touch, adding a cool, creamy contrast to the sweet and savory glaze. Whether you’re serving these at game day or a backyard hangout, they’re guaranteed to be the first plate that’s empty.

Helpful Tips

  • Don’t cut all the way through: Slicing about halfway into the sausage keeps each piece intact while still opening it up to soak in the glaze, so you get maximum flavor without the pieces falling apart.
  • Watch closely under the broiler: The sugar in the sweet chili sauce can go from perfectly charred to burnt in seconds, so stay near the oven during those last few minutes.
  • Reserve sauce before tossing: Setting aside a portion of the glaze before it touches the raw sausage keeps your dipping sauce free of any contamination and gives you a clean base for the mayo.

  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons Momofuku Chili Crunch or to taste
  • 2 tablespoons mayonnaise

Instructions

  • Preheat the oven to 450°F(230°C).
  • Make cuts 1/4 inch apart all along the sausage, cutting about halfway into the sausage. Then cut each sausage into about 5-6 pieces. Place them in a bowl.
  • Combine butter, sweet chili sauce, soy sauce, and chili crunch in a jar. Shake to combine. Pour half of it onto the sausages and set the rest aside.
  • Toss the sausages in the sauce, then place them on a foil-lined baking sheet.
