Hot Cheesy Bean Dip

This Hot Cheesy Bean Dip is a cheesy, bubbly, crowd-pleasing appetizer that goes from oven to table in one dish and disappears just as fast. It reheats beautifully, too, so leftovers (if you have any) are just as good the next day.

Hot cheesy bean dip

It takes just five minutes to mix together before the oven does all the work, turning simple pantry staples into a rich, melty dip. The combination of refried beans, cream cheese, and two kinds of shredded cheese gives it an ultra creamy texture, while the taco seasoning adds savory depth without any extra chopping or prep.

Helpful Tips

  • Soften the cream cheese fully: Letting the cream cheese come to room temperature before mixing helps it blend smoothly into the beans instead of leaving lumps behind.
  • Shred your own cheese: Freshly shredded Cheddar and Monterey Jack melt more smoothly than pre-shredded bags, which are coated in anti-caking agents that can make the dip grainy.
  • Watch the bake time: Ovens vary, so start checking around the 20 minute mark and pull the dip once the edges are bubbling and the top cheese is golden, so it doesn’t dry out.
