When we first got our Ninja Woodfire Outdoor Grill, we were really excited to try smoking a whole chicken on it. Making a whole chicken on a pellet grill or electric smoker is pretty easy, but it takes quite a while to cook it that way in order to infuse it with all that delicious smoky flavor.

We’ve made this whole chicken on the Woodfire Grill so many times now, because it always turns out great. You really can’t beat it because of the wonderful smokiness and tenderness of the meat with very little intervention from you.

Helpful Tips

  • Pat the Chicken Dry Before Seasoning – Moisture on the surface can prevent the skin from crisping. Pat the chicken dry with paper towels, then apply oil and seasoning for better browning and more flavorful skin.
  • Use the Woodfire Smoke Function Sparingly – A little smoke goes a long way with chicken. One scoop of pellets is usually enough to add a noticeable smoky flavor without overpowering the meat.
  • Cook to Temperature, Not Time – Use a meat thermometer and cook until the thickest part of the breast reaches 165°F (or the thigh reaches 175°F for even more tender dark meat). Cooking by temperature helps prevent dry chicken and gives more consistent results than relying on cooking times alone.

Ingredients
  

  • 3-5 pound whole chicken
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder

Instructions
 

  • Pat dry the chicken with a paper towel.
  • Mix together all spices and season the chicken all over.
  • Fill the pellet basket with pellets.
  • Place the chicken, breast side up, on the grill.
  • Insert a meat probe in the thickest part of the breast.
  • Close the door. Set the dial to Smoker. Set the temperature to 350°F. If you have the Ninja Woodfire Pro, you can use the built-in temperature probe to monitor the meat temperature, so set it to 165°F. The machine will turn off when the meat reaches that temperature.
  • If you don’t have the Pro, you should set the timer for 1 hour of cook time and then about 15 minutes before, start to check it with an instant read digital meat thermometer.
  • Select START/STOP to begin cooking.
  • When the chicken is at 165°F, remove it from the grill and rest for 15-20 minutes before carving.
