Chipotle Chicken & Bacon Skewers

Helpful Tips
- Soak your skewers so they don’t burn on the grill. Thirty minutes is enough, but longer won’t hurt.
- Keep the pieces uniform so everything cooks evenly. Aim for 1-inch chunks of chicken and bacon.
- Watch for flare-ups since bacon can drip fat onto the grill. Move skewers as needed to avoid burning.

Chipotle Chicken & Bacon Skewers
Ingredients
- 1 pound boneless skinless chicken breasts cut into 1” pieces
- 6 thick cut bacon strips cut in 1” pieces, partially cooked
- salt and pepper for seasoning
- 1/2 cup sweet BBQ sauce
- 2 chipotle peppers canned in adobo sauce
- 1 tablespoon honey
Instructions
- Soak 8 wooden skewers in water for at least 30 minutes. Preheat the grill to medium heat.
- Partially cook the bacon then cut in into 1 inch pieces.
- Alternate threading the chicken and bacon onto the skewers. Season the skewers with salt and pepper.
- Place the BBQ sauce, chipotle peppers, and honey in the blender. Puree until smooth.
- Grill the chicken skewers for 4 minutes per side. Baste the skewers with the BBQ chipotle sauce and grill another 3-4 minutes per side, until the edges of the bacon are crisp.
- Serve with additional sauce on the side.
Notes
- Adding the whole peppers will make it very spicy. If you don’t like it spicy just add the adobo liquid from the can instead of the peppers.
- Partially cook the bacon so that you don’t end up with rubbery bacon that isn’t crispy.
