Mexican Street Corn is one of my favorite quick and tasty foods that can be found at street stands in Mexico. The ears of corn are tossed on the grill to get tender and sweet, then they’re lathered up with a mixture of mayo and sour cream, and topped with cotija (Mexican cheese), chili powder, and cilantro.

Helpful Tips
- Char the Corn for the Best Flavor – Grill the corn until it develops dark, charred spots on all sides. The smoky, caramelized flavor is what gives elote its signature taste and sets it apart from plain corn on the cob.
- Apply the Sauce While the Corn Is Warm – Spread the mayonnaise and crema mixture over the corn immediately after cooking. The warmth helps the sauce adhere better and creates a creamier coating.
- Use Fresh Lime Juice at the End – A squeeze of fresh lime brightens the rich flavors of the cheese and sauce. Add it just before serving for the freshest flavor and the perfect balance of richness and acidity.

Ingredients
- 2 medium ears of sweet corn husks removed
- 2 tablespoons mayonnaise
- 2 tablespoons cotija cheese crumbled
- 1 tablespoon fresh cilantro chopped
- 1/2 teaspoon chili powder or paprika
- Fresh lime wedges
Instructions
- Grill the corn on the barbecue or boil until tender. Allow to cool slightly.
