Easy & Delicious Reuben Sliders

These Reuben Sliders are made with tender corned beef, tangy sauerkraut, melted Swiss cheese, and creamy Thousand Island dressing making a crowd-pleasing twist on a classic sandwich.

We are totally in love with Reuben sandwiches in my house. When we have a party, one of the first appetizers we think of is a Reuben slider. Everyone loves them and you don’t see them very often, so people go mad for them.

To make them, you can use corned beef that you have leftover or buy sliced pastrami like we use in these simple Reuben bites. Another easy way to go is air fryer brisket. Whatever works for you.

Helpful Tips

  • To make ahead, assemble the sliders in advance and refrigerate them until you’re ready to bake. Just remember to brush the butter on top right before baking for that golden finish.
  • Serve these sliders with extra Thousand Island dressing on the side for dipping, or try a side of spicy mustard for a little extra kick.

Ingredients
  

  • 12 slider buns
  • 1 pound thinly sliced corned beef
  • 1 cup sauerkraut drained
  • 12 slices Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tablespoons unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Slice the slider buns in half and place the bottom halves in a greased 9×13 inch baking dish.
  • Layer the thinly sliced corned beef on the bottom halves of the slider buns.
  • Spoon the sauerkraut evenly over the corned beef.
  • Place a slice of Swiss cheese on top of the sauerkraut.
  • Spread a layer of Thousand Island dressing on the cut side of the top halves of the slider buns and place them on top of the Swiss cheese to form sandwiches.
  • Brush the butter over the tops of the slider buns.
  • Cover the baking dish with aluminum foil and bake for 15 minutes, or until the cheese is melted and the sliders are heated through.
  • Remove the foil and continue to bake for an additional 5 minutes, or until the tops are golden brown and crisp.
