Ingredients
- 1 pound salmon fillet skinless, cubed
- 2 teaspoons olive oil
- 1 teaspoon lemon pepper seasoning
- 1/4 teaspoon salt
- 1 large lemon sliced thinly
For the dill sauce:
- 1 tablespoon fresh dill chopped
- 1 tablespoon red onion finely chopped
- 1/2 tablespoon fresh lemon juice
- 1/2 tablespoon extra virgin olive oil
- 1/2 tablespoon mayonnaise
- salt and ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon cubes into a bowl with olive oil, lemon pepper seasoning, and salt. Gently toss to coat.
- Thread 2 cubes of salmon onto a skewer with one folded lemon slice in between. Repeat until all skewers are made. Place them on the baking sheet.
- Bake for 6 minutes, turning halfway through.
- For the dill sauce, combine all 6 ingredients in a bowl and whisk together.
- Pour the sauce over the salmon just before serving and garnish with fresh dill and lemon slices.
