Helpful Tips
- Keep the pastry cold: Puff pastry is easier to work with when it’s chilled. If it gets too soft, pop it in the fridge for a few minutes before rolling and cutting.
- Roll tightly: For even baking and well-shaped pinwheels, roll the pastry snugly around the filling before slicing. This prevents gaps and helps the layers puff up beautifully. It also helps to pinch the end to the rest of the roll so they stayed in a roll while they cook.
- Use an egg wash: Brushing the tops with an egg wash before baking gives the pinwheels a gorgeous golden-brown color and a crisp, flaky finish.
