When blueberries are in season, this Blueberry Cobbler is one of the easiest ways to put them to good use. The berries bake down into a thick, jammy filling with a soft, golden topping that soaks up all that flavor.

It’s simple, classic, and perfect for when you want a warm dessert without pulling out a mixer. Serve it straight from the baking dish with a scoop of vanilla ice cream and you’re set.

Helpful Tips

  • Use fresh or frozen blueberries. If using frozen, don’t thaw them first. Add a minute or two to the bake time if needed.
  • Pour the batter evenly. Try to cover most of the berries so the topping bakes up soft in the center and lightly crisp around the edges.
  • Let it rest before serving. Give the cobbler about 15 minutes to cool so the filling thickens slightly.
