Ingredients
  

  • 1 pound boneless skinless chicken breasts cut into 1” pieces
  • 6 thick cut bacon strips cut in 1” pieces, partially cooked
  • salt and pepper for seasoning
  • 1/2 cup sweet BBQ sauce
  • 2 chipotle peppers canned in adobo sauce
  • 1 tablespoon honey

Instructions
 

  • Soak 8 wooden skewers in water for at least 30 minutes. Preheat the grill to medium heat.
  • Partially cook the bacon then cut in into 1 inch pieces.
  • Alternate threading the chicken and bacon onto the skewers. Season the skewers with salt and pepper.
  • Place the BBQ sauce, chipotle peppers, and honey in the blender. Puree until smooth.
  • Grill the chicken skewers for 4 minutes per side. Baste the skewers with the BBQ chipotle sauce and grill another 3-4 minutes per side, until the edges of the bacon are crisp.
  • Serve with additional sauce on the side.

Notes

  • Adding the whole peppers will make it very spicy. If you don’t like it spicy just add the adobo liquid from the can instead of the peppers.
  • Partially cook the bacon so that you don’t end up with rubbery bacon that isn’t crispy.
