Ingredients
  

  • 18 slices Italian or French baguette sliced ½” thick
  • 1/4 cup olive oil
  • Salt and black pepper to season
  • 2 cups fresh grape or cherry tomatoes diced
  • 1/4 cup parmesan cheese freshly grated
  • 1/4 cup fresh basil chiffonade
  • 2 cloves garlic minced
  • salt and fresh ground pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Preheat oven to 400˚ F(200˚C). Line a baking sheet with parchment paper.
  • Brush each of the slices of bread with olive oil. Season with salt and pepper. Place them on the baking sheet and toast for about 8 minutes, until golden. Remove from the oven.
  • Meanwhile, put the tomatoes in a mixing bowl with the cheese and basil. Stir. Taste and season with salt and pepper to your liking. Add the olive oil and balsamic vinegar. Stir to combine.
  • Load up each of the bread slices with the tomato mixture. Serve.
